We can’t wait for this one! With our friends from Heathcote Gin we’re inviting you along to learn about the process of making gin and you’ll play a key roll in creating Lay Low’s first ever Christmas Gin. Which flavours do you like? Which botanicals will you choose? As a participant in this masterclass you will be credited as a co-creator of our gin. You’ll even get your name on the label!

Our gin will be released in December - just in time for Christmas!

For this Seddon adventure follow the LUX⋅POT⋅LOW track – all guests will start at LUX for course one, then head to POT for course two before heading to the finish line at LOW for a celebratory cocktail & dessert. The Gospel Whiskey Masterclass

It's all about the rye. Four years in the making, The Gospel is pioneering the distillation of grain whiskey in Australia, focusing specifically on rye. Come along and get stepped through the process of making rye whiskey, hear the challenges, and understand why it's the most rewarding to drink. Plus, be one of the first to taste The Gospel’s unreleased Straight Rye Whiskey.

Simon Toohey’s Smokehouse at Peachy Keen

Our friends at Peachy Keen in Williamstown are hosting MasterChef 2019 Finalist, Simon Toohey, as he realises his dream of running a smokehouse that celebrates vegetables. Guests will be treated to a communal dinner party where food will be discussed and shared in the relaxed setting of Peachy Keen.

Chartreuse Tasting

First produced in 1737, Chartreuse is one of the oldest liqueurs in the world, and is the only one still made by monks. On Wednesday 9th October, our friends from Spirits Platform will be treating you to a tasting session, including some rare releases, with Chartreuse cocktails designed by the team at Lay Low.

“Sustainable Drinking” Cocktail Masterclass

We realise it sounds like we’re testing your drinking endurance here. But this is something very different. Masterchef 2019 finalist, Simon Toohey, hosts a cocktail masterclass unlike any you've been to before. Following his passion for sustainable approaches to food, and Lay Low's minimal waste philosophy, Simon will demonstrate creative ways to use food products that you may otherwise throw away at home. What can you do with used coffee grounds? What about that bottle of wine that you didn't finish with dinner last night? You will be inspired by new ways to use herbs, fruit skin or peel and milk too!

Ticket includes welcome drink, four cocktails and dinner.

Lay Low welcomes Poor Toms Gin for a masterclass not to be missed. Established in 2015 by two housemates, Jesse and Griff, Poor Toms has grown into one of Australia’s most loved gin brands. Enjoy first bites at your starting point (Copper Pot or Luxsmith) then switch things up for the next course at the opposite venue. Last stop is Lay Low to end the night, where dessert canapés will be matched with a cocktail. We’ve timed this year’s tour to fall on Anzac Day Eve which makes settling in for the night at Lay Low that much easier – we’ll be serving up whisky flights and sticky wine extras for those who want to kick on and make a night of it.
